Get a rocket to an altitude of 70KM and return the crew safely!
The key elements here are staging and parachutes.

Achieve a stable orbit, and then bring the pilot home safely. You must complete at least one full loop without losing or gaining altitude on your apoapsis or periapsis for the orbit to count!
You must master the gravity turn and staging.
Precision Orbital Mechanics
Set up a stable orbit arounf Kerbin with a difference of less than 2KM between the altitude of your apoapsis and periapsis.
Learn how to eyeball your burns as well as use the orbital planner.
Hit the Mun or Minmus with a rocket. You don't need to land safely or even enter a stable orbit- just hit the target!
Learn how to execute a transfer orbit and the rest is easy.
Get a rocket into orbit around the Mun, complete at least one full orbit, and then return the crew safely to Kerbin.
This is just an application of all your experience with orbital manoeuvres so far.
One Small Step
Land a Kerbal on the mun, plant a flag and then get the crew home safely!
The descent is the tricky part. Remember that burning retrograde will help kill your horizontal velocity. Burning straight up will only kill vertical velocity, and you need to get rid of both to be able to land.
Install and use a mod. Try ISA mapsat or Kerbal Engineer!

Successfully dock two ships in orbit around Kerbin.
Orbital rendezvous is tricky. Beyond that, keep speeds slow when you want to dock. No cheating and using a docking autopilot!
One of these things is not like the other...
Locate an anomaly and investigate it.
The ISA Mapsat mod can help you find them. Precision landing however is a challenge!
Build a rover and land it on the Mun. It must be drivable when it arrives!
If you can get to the mun easily the only challenge is how to position the rover.
Build a refuelling station in orbit around Kerbin containing at least 1 Rockomax Jumbo 64's worth of fuel and oxidizer. Then use it to refuel a mission. Bonus points for getting all the fuel up in one go!
Getting all the fuel up in one go is very hard, but possible. Try doing it over two or three trips instead. I hope you're comfortable with docking!
We cannot stay in the cradle forever
Get a probe into orbit around any other planet in the Kerbol system.
Eve is an easy target. Try researching the Hohman transfer too. The protractor mod will help you calculate phase and ejection angles.
The Wright way
Build a space plane and get it into orbit.
Pay attention to your centre of mass and centre of lift. Jet engines are great at low altitude, but will flame out quickly so you'll need rockets of some sort.
